Fermentation: Small open fermenters; punch down 2x per day
Yeast: Cab and Franc-Cepage Cabernet, Merlot-Cepage Merlot; 17-day average fermentation; press off to barrel; Inoculate for malo-lactic fermentation (viniflora oenos/ Hansen CH16)
Barrels: 1/3 one-year old French Traditional Chateau barrels, 2/3 older French oak
Barrel Time: 30 Months
Blend: 100% Estate Cabernet Sauvignon, Alcohol: 48 cases

Tasting Notes: This wine opens with incredible promise — aromas of violets and notes of thyme, bay and cinnamon followed by dark fruit flavors of plums, raspberries and strawberry. Creamy vanilla and supple tannins only hint as to what is to come!

Blend: 75% Estate Cabernet Sauvignon; 25% Estate Cabernet Franc; Production:48 cases

Tasting Notes: We tasted a barrel sample of this wine the night before it was to be bottled (June 1st, 2015). It was amazing! It grabbed our attention with incredible aromas of violets and very dark cherries followed by so bushels of blue, black and red berries. I could almost taste a golden brown almond-vanilla cobbler crust a top the bubbling orange peel scented berries. Hints of cola, green tea, star anise and thyme round out the flavors. Soft, well-structured tannins make this wine a perfect package. It will be very interesting to see how it ages in the bottle.

Tasting Notes: Beautiful deep purple-red in color, this wine has amazing aromas of dark sweet fruit, plus floral notes of violets and rose petals. The flavors linger and change on the palate, apple and backberry flavors accompanied by candied citrus and ginger, cinnamon and cloves and a lovely bramble of mountain herb, licorice and vanilla. Finishing with well-structured tannins and balanced acidity.
